Recipes from the weekend

We tried a few new recipes this past weekend up at the lake. Here's the roundup:
Corn, Cheddar, Scallion Strata - the only tweaks we made was used Mexican cheese and then used 3-4 pieces of sliced cheddar cheese in the middle layer.
Maire assembled these pita bread pizzas. One was pesto and parmesan cheese and the other was brie, strawberries and blackberries with a drizzle of balsamic glaze. Both baked at 350 degrees until the cheese was melted.
It's hard to see, but we made this delicious sweet corn with maple brown butter and bacon side and served it with salad, chicken, and tri-tip. I used a combo of fresh and frozen corn and it was quite tasty!
I baked a carrot cake to celebrate Mark's birthday. It was super easy and loved the cinnamon taste with the cream cheese frosting.
