I've been meaning to post this recipe for Roasted Corn with Tomato Soup for quite some time! I made this soup a few weeks ago and it was quite possibly the best soup dish ever. Tyler even went as far as saying "Oh man, this soup is by far my favorite!" It's really easy and stores well. I followed the recipe for the most part, except for the following:
- I used three tomatoes instead of two.
- I used a bag of frozen Trader Joe's roasted corn instead of roasting my own. Same deliciousness in a fraction of the time!
- I used regular chili powder instead of the Chipotle chili powder.
