Mommy's Chicken

Growing up, my dad's mom would make us a simple rice and chicken dish that we all LOVED. After a long day at work, I didn't feel like making what I originally had planned and wanted something easier...that's when I turned to Mommy's Chicken. This dish is so easy and full of flavor...definitely recommend it for a week night dinner :)

Mommy's Chicken
 Ingredients
(The ingredients are per serving)
  • 1/4-1/2 package of Lipton's onion soup mix (depends how much you like a caramelized onion flavor. It's really up to your discretion.)
  • 3/4 cup of cooked rice or orzo (I've done it with both) per chicken breast
  • 1 chicken breast per person
  • 2 tablespoons of milk per piece of chicken
  • Foil
Directions
  1. Preheat oven to 400 degrees. Cook rice according to package directions.
  2. Tear a piece of tin foil about 12 inches long. Place the rice/orzo in the middle of the foil and sprinkly half of the onion soup mix. Pour 1 tablespoon of milk over the rice/orzo. 
  3. Place chicken breast on top of rice. Sprinkle remaining onion soup mix and 1 tablespoon of milk.
  4. Wrap chicken with tin foil so the chicken is completely covered. Bake for 25-30 minutes.
